Stuffed Calvados & Cider-brined Pork Chop
Our 10oz bone-in Berkshire pork chop is brined for 16 hours in a mixture of Calvados (French brandy), apple cider, crisp chardonnay, and Dijon mustard. It’s stuffed with braised apples, fresh fennel, and various complimentary herbs.
Each order comes with a generous serving of English pea risotto, finished with savory wild mushrooms.
