Roasted Carrot & Poblano Peppers with Tomatillo Salsa
We gather an abundance of colorful, freshly picked, heirloom carrots for this vegan taste adventure. We season and then slow roast them with a blend of Sazon, poblano peppers, and olive oil. Once roasted, the carrots and peppers are set over a bed of seasonal mixed greens and topped with house-made tomatillo salsa and a squeeze of lime.
