RECIPE – CRAB & LOBSTER AU GRATIN

INGREDIENTS
- 1⁄4 cup of minced garlic
- 1 cup of shallots
- 1⁄2 cup of rice flour
- 1/8 cup of breadcrumbs or grated parmesan cheese (optional)
- 2 egg yolks
- 1⁄2 cup of unsalted butter
- 1 cup of half & half
- 4 oz of each cheese (asiago cheese, sharp cheddar, and fontina)
- 1 tablespoon of Chef Tiki’s Creole Spice
- 1⁄2 teaspoon of black truffle salt
- • 5-8 oz of lobster meat (cooked & chopped)
- 12 ounces of lump or king crabmeat

Before you begin
- Gather all of your ingredients.
- Preheat your oven to 375 degrees.
- Coat the casserole dish lightly with olive oil or butter.
Bowl 1
- Shred various cheeses.
- Add all cheeses into one bowl and set aside.

- Melt butter and olive oil over medium heat. (Be careful not to have the heat too high or butter will burn.)
- Add the shallots and garlic.
- Use the spatula to sauté all ingredients until shallots become soft.
Bowl 2
- Add the egg yolks, creole spice and truffle salt into the bowl.
- Blend lightly using a regular kitchen fork.

- Slowly add the flour to the onion and garlic mixture.
- Keep stirring the mixture with a wooden spoon.
- Immediately start to add the half and half. (This should result in a thinner flour mixture. If the mixture is too thick, use a little regular milk to adjust it.)
- Add the egg yolk mixture from BOWL 2 to the mix.
- Pay attention to the heat and be careful not to cook the eggs. (The key is to stir with an easy smooth touch.)
- Cook for 8 – 10 minutes.
- Remove entire pan from the heat source.
- Add the crab and lobster fully into the flour mixture.
- Take 1⁄2 of the cheese (8 oz) and mix into the pan with everything else.
Casserole dish
- Grease/oil the casserole dish with a light coat of butter.
- Pour the entire crab and cheese mix into a greased casserole dish.
- Top the contents of the casserole dish with the remaining cheese.
- Add breadcrumbs and parmesan as desired.
- Bake uncovered at 375 degrees for 12-15 minutes.
- Remove with care to not disturb the perfectly golden topping.
